We raise and process French gros gris farm snails in Yssingeaux in Haute-Loire, in the Pays des Sucs... It is in the heart of nature, at an altitude of 900 m, that we raise and process our snails...
It all starts in March with the awakening of the breeders, in order to make them mate and ensure their offspring and the population of the parks.
This is followed in the spring by plowing the outdoor plots and sowing which will ensure a dense plant cover, guaranteeing the well-being of our snails. The placement of the "spats" (just hatched snails) takes place at the end of May, when all risk of frost has passed. The snails will stay like this for between 5 and 6 months depending on the weather conditions, until they become mature. At the beginning of autumn, it's time to collect, the parks are emptied of their inhabitants. After a fasting phase, the snails are slaughtered and cooked in different forms to satisfy our private customers, but also restaurants, caterers, delicatessens, etc... its own recipe, including our aperitif products "Escargotine" to toast and "Escapéro" to prick, our cooked products "Snails confit", "Snail soup with nettle tips", to our frozen products in the form of crisps and shells ready to slide in the oven, everyone will find something to enjoy. The year thus passes at the slow pace of our herd, with for us a single objective, that of offering you a quality product obtained "from farm to fork".
Our products are on sale all year round on the farm, at the “Saveurs des fermes d'Yssi” producers' store in Yssingeaux, and on the first Saturday morning of each month at the Monistrol/sur/Loire producers' market.
