Justine and François Fayard, who raise organic cows, calves, and Limousin cattle on their new farm located in the commune of Sembadel, have diversified their business by opening a producers' shop in La Chaise-Dieu, in order to sell their products on site throughout the year, as well as those of the local producers with whom they work.
How has your farm evolved since its creation?

Justine Fayard: My husband and I formed a joint farming operation (GAEC) because at the time we were each farming independently. Then we moved to Hierbes in the commune of Sembadel, as we had previously been located at Pont de Malvières on the banks of the Senouire River in La Chaise-Dieu. We bought a farm and converted it for raising our cows. Today we have about a hundred head of cattle, including the calves, not counting our small herd of horses. We have Tarine cows from Savoie that we milk to feed the calves, and Limousin cows for meat. All our produce is organic, and we sell everything directly to consumers.
Why did you want to open this store?
Justine Fayard: First of all, it's because I'm from here, so it was really important to me. And then, it's the fact that I can work with everyone. We tried it for a season and it worked very well, so we decided to keep the store open because everyone was very happy. It's been four years this year!

What types of products are sold?

Justine Fayard: We have all the meat we produce on our farm: veal, beef, and also pork that we raise ourselves. We also have cow and goat dairy products. We carry pasta from Ferme Archer, flour, green lentils from Le Puy, and jams. Seventeen local producers are represented here. We also offer Ardèche wine while we wait to be able to showcase the wine that is starting to be produced in the department. The fruit also comes from Ardèche, and we also sell olives from Nyons.
Do the producers sometimes come to the shop?
Justine Fayard: Yes! Some of them come to meet the customers. It's important for us and it helps foster exchanges. In fact, we're in contact with new producers who are interested in stocking their products. I'm thinking, for example, of those who produce La Véritable mustard in Polignac.

Who is your clientele?

Justine Fayard: There are, of course, local customers, but also many people passing through and quite a few tourists. They are mainly people who appreciate organic and local products. We are open year-round, even in winter, but with slightly reduced hours.
