Le Comptoir des Saveurs is a restaurant run by Claire and Mickaël Marchand since 2022, located on Avenue Foch in Le Puy-en-Velay. There, they offer authentic and flavorful cuisine made with fresh, local products, in a warm and welcoming family atmosphere that has won over many customers. It's an opportunity for them to showcase homemade recipes such as shredded duck parmentier or creamy green lentil soup from Le Puy-en-Velay, served with a Périgord-style glaze.

Has the restaurant found its footing since its opening?

Mickaël Marchand: Yes! He's found his footing and has built a loyal clientele. There's the weekday clientele, mainly people who work in the offices near the restaurant, and then there's the weekend clientele. This is made up of people who live in the Puy-en-Velay area, but also from Cayres and Saint-Paulien. Some come from Saint-Étienne and Lyon. In the summer, we also welcome tourists.

Claire Marchand: We have succeeded in retaining our office clientele because we have understood their expectations. They need to eat well and quickly between 12:15 and 13:30.

What kind of cuisine is offered today?

Mickaël Marchand: During the week, we offer a daily menu with several choices. For example, we might have salmon rillettes on a crispy toast, shredded duck confit in a parmentier style, or pork tenderloin with mustard seeds. There's also the Provençal tartine, and the Velay tartine with lentils prepared like a tartare, as well as a creamy frozen cauliflower soup with shavings of cured ham.

The gourmet weekend menu includes the famous creamy green lentil soup from Puy-en-Velay, glazed with Périgord tenderness, as well as a dish called "The Pride of Our Pastures," marbled with Auvergne blue cheese and Charolais beef, not forgetting the mosaic of pink trout with roasted lentil husks, served with a small vegetable vinaigrette.

A quick word about your suppliers

Mickaël Marchand: We get our meat from Méjean butcher shop in Costaros. We get our cheese from Chambon in Chaspuzac, and also from Les Artisous in Saint-Jean-Lachalm. Then there are the products from the Gérentes dairy in Araules. Our lentils come from Chez Sabarot. For fish, we get it from a fishmonger in Clermont-Ferrand. We have fresh fish every day.
