Le Blizart is a lively market bistro and bar located in the heart of La Chaise-Dieu, where you can enjoy delicious local produce as well as flavors from further afield. You can also sample craft beers on tap, sodas, lemonades, artisanal juices, house-made drinks, and a selection of organic wines. This establishment has been run by an association since April 2024.

What is the history of this establishment?

Caroline Rubio: Le Blizart is a lively bar that has been run by the association "Les Congères" since April 1, 2024, but it was founded by Cécile and Hélène Mery in 2013 with the idea of showcasing local products, artisans, and artists. A couple bought the business during the Covid pandemic and ran it for three years before closing down. It was from this point that the idea of creating a collective through donations came about. Today, seven people are involved in the establishment: Charlotte Mahut, Céline Delbarre, Cécile Cubizolle, Marie Gilardi, Romain Chardon, Violène Mery, and myself.

What is the concept?

Caroline Rubio: First and foremost, it's a market bistro, because we try as much as possible to use local produce, sourced from markets and greengrocers, to support everyone's work. All our meat comes from a butcher in Arlanc. He works with his brother, who raises pigs. The poultry comes from Maison Vey in Polignac. We source our fruit juices and sorbets, for example, from small local producers. Our cheeses come from GAEC "Les Pacages Caseï," an organic farm in Malvières.

What type of cuisine do you offer?

Caroline Rubio: We offer both vegetarian and meat-based dishes. We try to alternate every other day to cater to everyone's preferences. For example, we offer sausage rougail, made with local sausages and flavors from elsewhere. We also offer a variety of vegetable curries, with lots of spices and sauces, or zucchini parmigiana with Malvières fresh cheese and Parmesan.

Is it also a lively bar?

Caroline Rubio: Yes! Here you'll find a foosball table, darts, games for children, and books. Some Casadéens have even made it a habit to come and play foosball every Monday. And we try to offer an event once a month, outside of July and August. It could be a karaoke night, a concert, a discussion evening, or a documentary screening. We also offer hairdressing brunches and thrift store events.

And what about consumption?

Caroline Rubio: You can enjoy local beers brewed in Sembadel Gare by David Baggs , artisanal juices like the apricot juice from Surprises d'Elise , or locally produced apple juice. We also offer local aperitifs, such as Maurin, verbena, Salers, or Avèze, as well as cocktails with or without alcohol.

Who is your clientele?

Caroline Rubio: It's very diverse. There's the local population, of course, but also people looking for fresh produce. There are also people passing through and those attending the Chaise-Dieu Music Festival.
